Zwilling's Miyabi Kaizen 5000 FC-D Shotoh Knife offers authentic Japanese blade shapes crafted from premium steel compositions, layered in exotic damask style patterns then hardened, tempered and honed for extraordinary sharpness. The 3 stage grinding, sharpness and polishing process creates exceptional sharpness and the whole cutting edge can be used since there is no finger guard.
The bolster helps prevent calluses so you can have both a smooth knife and hands. Its blade has an FC61 fine carbide steel blade core and 48 layers of steel surrounding the core. The ice-hardened blade adds resilience. Avoid using glass, ceramic or stone cutting boards as it will dull the knife and the knife is recommended to be hand washed only.
